CARROT CAKE OATS (the Easter bunnies favourite breakkie?) – 
serves 2 



  3/4 cup rolled oats 
1 carrot grated 
½ cup sultanas 
4 pitted medjool dates finely diced 
1 cup almond or coconut milk 
2 Tbs chia seeds 
2Tbs shredded coconut 
1/4 walnuts 
1 tsp cinnamon 
1 tsp nutmeg 
4 Tbs greek yoghurt for topping 
Extra grated carrot, dates, walnuts coconut flakes for topping. 
  On the stove mix the oats with the milk and bring slowly to the boil. Add all other ingredients and place on a low heat for 3-5 mintues until thick and creamy. Pour half into each bowl or jar and top with some Greek yoghurt, grated carrot, walnuts and coconut flakes. Oh and a little sprinkle of cinnamon!
