If you have curry cravings like me and love butter chicken this is an awesome recipe which you can whip up yourself and it tastes just like the real thing. Plus you know exactly what goes into it (and it doesn’t contain unnecessary oils or fats) ALL HEALTHY !


Serves 4 – GF DF P

500gms chicken breast 

1 tin full fat coconut milk 400mls

1 tin light coconut milk 400mls 

1 tin tomato chopped 400ml 

Garlic minced or fresh 

Onion whole diced up 

1/2 tsp Paprika 

1tsp Ground coriander 

1 tsp curry powder 

1/4 tsp chilli powder 

salt and pepper 

A whole tree of fresh coriander ;) (I bloody love it) 

Homemade naan bread; recipe >> here 

Vegetables galore (I used broccoli and zucchini)

Coconut flour (or corn flour) to thicken if necessary 


Fry onion, garlic and herbs in oil. Add coconut milks and tin tomato. Add diced chicken and simmer for 15 mins. Add vegetables and simmer for another 30 mins. Add flour if it needs to be slightly thicker. The house will smell insane.

Make the naan bread too (note it needs to sit before cooking for an hour so prep the naan first then start making the curry)

Serve with basmati rice and fresh coriander if you like. And of course the Naan!!
