❤️ CACAO ZUCCHINI MUFFINS ❤️
(Makes 12 - gluten/dairy free - 25 min)
1 large zucchini grated
1+ 1/2 cups almond meal or flour of choice
1 tsp baking powder
Pinch of salt
3/4 cup cacao powder
1/2 cup honey, rice malt syrup or @natvianaturalsweetener
2 eggs
1/2 cup coconut oil melted
1 tsp vanilla extract

Preheat oven to 180. In a blender or processor whizz oil, eggs, honey and vanilla. Set aside.
In a big bowl add almond meal, baking powder, salt and cacao powder and mix. Pour wet ingredients into dry. Add grated zucchini and mix until combined. Spoon into patty pans or lined muffin tins. Bake for 20-25 mins. Until skewer comes out clean! Great for freezing. Made with love #baking #muffins #valentinesday #sugarfree

1. SATAY CHICKEN SALAD
Make a stir fry of every sad looking veggie you have in the fridge. Chicken if you have some. Chuck in a mix of coconut oil, peanut butter, turmeric ground, fresh ginger and garlic and lime. Serve with fresh lettuce/spinach, coriander and carrot ribbons! Peanuts on top are 👌🏼

2. BROCCOLI BACON QUICHE
Recipe for my oat pastry is on my blog. Once cooked add 6 eggs, dash of any milk and diced bacon and broccoli. Top with cheese optional and bake for 35 minutes!

3. CAULI CHICKPEA CURRY

4. DECONSTRUCTED SUSHI
This is super simple and is exactly as it sounds. Just as yum as sushi without any of the annoying prep. Cook some brown rice. Grab a tin of tuna or a cooked salmon filet. Chop up some cherry tomatoes and cucumber ribbons. Serve with tamari and wasabi 👍🏼

5. TURMERIC YOGHURT CHICKEN
Chop up raw chicken. Marinate in green yoghurt, ground turmeric and some peanut or almond butter. Fry up and serve with veggies and cauliflower rice for a low carb option.

6. ZUCCHINI BACON SLICE
Classic. 🤙🏼 3 large zucchini’s and 1 carrot grated. 8 eggs. 1/2 cup Parmesan cheese. 6-8 Diced bacon rashers. 1/4 cup olive oil. 1 cup oat/spelt flour. Herbs and spices to season. Mix grated ingredients with flour and herbs. Add bacon and cheese. Whisk the eggs. Add oil and eggs to the main mix. Pour into baking dish. Top with some pine nuts and bake for 60 mins at 180.
