L O V E B I T E S || little choc banana mini muffs 💋🍫 healthy and full of love. Not gluten and sugar! 💪🏼 ______________________________________________ CHOC BANANA LOVE BITES (Makes about 32 mini muffins - 20 minutes) 1 + 1/2 cups oats or oat flour 1/4 cup coconut flour 1/2 cup cacao powder 1 tsp baking powder 2 eggs 2 bananas ripe and ready 1/2 cup coconut oil 1/4 cup rice malt syrup or honey/maple Vanilla, salt and cinnamon as you wish _____________________________________________ Whizz the oats to flour if ya need first. I didn’t measure my flours exactly but this should be almost spot on. 🤞🏽 Combine all dry ingredients in a bowl. ❤️ Blend wet ingredients together for about 30 seconds. Add wet to dry. Mix together. Spoon into mini muffin tins. Bake for 12-15 minutes at 180 degrees. Sit for 5 mins. Cool on rack! Spread LOVE! 💋❤️🍫 #valentinesday #chocolate #muffins #glutenfree #dairyfree #sugarfree

L O V E || give the gift of zucchini this V-Day! 🤘🏼🌹 my cacao zucchini muffins will swoop anyone off their feet! Including yourself _______________________________________________ ❤️ CACAO ZUCCHINI MUFFINS ❤️ (Makes 12 - gluten/dairy free - 25 min) 1 large zucchini grated 1+ 1/2 cups almond meal or flour of choice 1 tsp baking powder Pinch of salt 3/4 cup cacao powder 1/2 cup honey, rice malt syrup or @natvianaturalsweetener 2 eggs 1/2 cup coconut oil melted 1 tsp vanilla extract ______________________________________________ Preheat oven to 180. In a blender or processor whizz oil, eggs, honey and vanilla. Set aside. In a big bowl add almond meal, baking powder, salt and cacao powder and mix. Pour wet ingredients into dry. Add grated zucchini and mix until combined. Spoon into patty pans or lined muffin tins. Bake for 20-25 mins. Until skewer comes out clean! Great for freezing. B L U E B E R R Y || this coconut slice was heavenly, really easy and full of yumminess! If ya love coconut (and blueberries) get your bake on! Great for after school snacks for the hungry kiddies going back to school today! ____________________________________________ 💜BLUEBERRY COCONUT SLICE💜 BASE 2 cups oats or muesli 1 cup almonds (or coconut flour or sunflower seeds for a nut free option) 1/2 cup maple syrup 1/2 cup coconut oil • Pre Heat oven to 180 degrees. Blend oats and almonds. Add maple and oil. Press into brownie tin to flat even level. Should be about 1-2 cm thick. Bake for 20 minutes. TOPPING 2 cups desiccated coconut 1 cup frozen blueberries 2 Tbs maple or rice malt syrup (more if you like it sweeter) 2 egg whites (this helps bind the coconut mix) 1/2 cup coconut oil Optional handful of fresh blueberries for decorations • In a blender combine all ingredients and whizz. Don’t whizz for too long you don’t want it to be too sloppy and soft. Press into tin on top of crusty base. If you want to add fresh blueberries like mine, now’s the time to press them into the top. Bake for another 20 minutes. Place in fridge to set for an hour. The top might still be a tad sloppy but the setting will set the coconut oil and berries and harden. M U F F I N S || healthy orange poppyseed muffins whipped up in less than 25 mins! Make these this weekend they are delish 😋🍊great for back to school lunch boxes ____________________________________________ ORANGE POPPYSEED MUFFINS Makes 12 muffins Paleo / sugar free / dairy free 2 fresh oranges juiced Zest of 1 orange 2 Tbs poppyseeds 5 eggs 2/3 cup coconut oil 1/2 cup coconut flour 2 cups almond meal 1 tsp vanilla essence 1 tsp baking powder 1/3 cup honey or maple 1/2 tsp cinnamon ____________________________________________ Preheat oven to 180. Mix flours and dry ingredients together. Set aside. Blend/mix eggs, oil, orange juice and honey together. Pour wet ingredients into dry and fold with a wooden spoon. Scoop into patty pans and bake for 20 minutes at 180c. Might need longer depending on oven! Take out when golden and skewer comes out clean #orangepoppyseed #muffins #paleo #healthy
D I N N E R || struggling for dinner ideas that are easy, healthy but taste great? I’ve got you... here are 6 dinners you can make! Save them and get cooking good lookings 🤙🏼 ________________ 1. SATAY CHICKEN SALAD Make a stir fry of every sad looking veggie you have in the fridge. Chicken if you have some. Chuck in a mix of coconut oil, peanut butter, turmeric ground, fresh ginger and garlic and lime. Serve with fresh lettuce/spinach, coriander and carrot ribbons! Peanuts on top are 👌🏼 _______________ 2. BROCCOLI BACON QUICHE Recipe for my oat pastry is on my blog. Once cooked add 6 eggs, dash of any milk and diced bacon and broccoli. Top with cheese optional and bake for 35 minutes! _______________ 3. CAULI CHICKPEA CURRY Recipe on my blog under savoury!! This is also great to make bulk and stash in the freezer ! _________________ 4. DECONSTRUCTED SUSHI This is super simple and is exactly as it sounds. Just as yum as sushi without any of the annoying prep. Cook some brown rice. Grab a tin of tuna or a cooked salmon filet. Chop up some cherry tomatoes and cucumber ribbons. Serve with tamari and wasabi 👍🏼 ________________ 5. TURMERIC YOGHURT CHICKEN Chop up raw chicken. Marinate in green yoghurt, ground turmeric and some peanut or almond butter. Fry up and serve with veggies and cauliflower rice for a low carb option. _______________ 6. ZUCCHINI BACON SLICE Classic. 🤙🏼 3 large zucchini’s and 1 carrot grated. 8 eggs. 1/2 cup Parmesan cheese. 6-8 Diced bacon rashers. 1/4 cup olive oil. 1 cup oat/spelt flour. Herbs and spices to season. Mix grated ingredients with flour and herbs. Add bacon and cheese. Whisk the eggs. Add oil and eggs to the main mix. Pour into baking dish. K E T T L E B E L L || who loves kettlebell swings? 🙋🏻‍♀️🙋🏻‍♂️ they can be one of the best pieces of equipment BUT (there’s always a but when it comes to getting a good butt) you need to be activating your glutes and hamstrings not just burning out your shoulders and compressing your lower back. 🕺🏻 Try these 4 things the next time you use a kettlebell 1. BRACE your core by squeezing your glutes as hard as you can when you stand up. If your butt is squeezed it’s almost impossible to over arch and lean back. 2. THRUST the hips forward. It’s a hip hinge movement not a knee bend/squat. If you want more power to help lift the KB then create a bigger force in your hip thrust. Use your glutes and hammies for power not your arms. 3. Lock the knees out and flex the quads as you create that snap motion of the hips forward to create power for the KB (my right leg is doing this and my quad is flexed but the left isn’t quite there) 4. Look about 2 meters in front of you at all times. This allows you to keep a flat back. If you look between your legs you’ll most likely curve your back. B R U N C H || public holiday cook up with my zucchini corn fritters 🤙🏼🌿 these are really easy and family friendly! You’ll love them! _______________________________________________ ZUCCHINI CORN FRITTERS 2 large zucchini’s grated 400gms tin corn 1.5 cups oat flour (just blended up oats) 2/3 cup almond meal (ground almonds) 8 eggs 1/4 cup olive oil Salt + pepper Cumin + chilli (remove this for the kiddies perhaps) _____________________________________________ Mix flours. Add seasoning. Add zucchini and 🌽 corn, add eggs and stir all together rapidly. Heat some oil in a pan. Fry up 4 at a time. 2-3 mins each side. Then in oven to wait for the rest to cook. This batch should make about 16 and usually about 3 per serve depending what you’re eating it with. Haloumi and avocado 🥑 is 👏🏼👏🏼!! L A M M O S L I C E || happy Australia Day ... let’s eat some Lammo slice 👏🏼🤙🏼 what's not to love about coconut, chocolate and almond butter! _____________________________________ LAMINGTON SLICE Base: 1 cup almond flour 1/2 cup @sukrinuk coconut flour 2 scoops @neat_nutrition whey vanilla 1/2 cup coconut desiccated 2 Tbs @pipandnut almond butter 3 Tbs @lucybeecoconut coconut oil 1/2 cup @pureharvest rice malt syrup + water if needed 🍫 Choc layer 1/2 cup @loving_earth cacao powder 3 Tbs coconut oil melted + coconut for topping. _____________________________________ Mix together base until combined and sticky. Press into lined base. Freeze for 20 mins. Mix together raw chocolate. Pour onto slice and sprinkle with lots of coconut. Freeze for another 20 mins. Take out. Slice up evenly!! I love hugs • gooood food. Wholesome belly hugging food like sweet potato fries, eggs, broccoli, sauerkraut, peanut butter, quinoa, spinach, avocado, raw balls... not all together although I’m sure it would be nice! P A R M Y || need some dinner inspo? 🤙🏼😆 Parmy and chips with a healthy twist! ______________________________________________ I make my own parmy crumb using spelt or almond flour and brown rice flakes with a bit of salt and oregano. I slice my chicken breast to make it 1/2 the thickness and then coat it in egg and the crumbs. The trick? Double coat them for an extra thick crunch. Egg - flour - egg - flour! 🤙🏼 __________________________________________________ Fry them up on a hot stove with oil to crisp/brown the outside then top with tomato paste, ham and cheese and bake them for about 10-12 mins.
